Calamarata
Calamarata is another pasta shape typical of the Campania region's culinary tradition. This pasta shape closely resembles paccheri, from which it takes its shape. Its name, however, comes from its resemblance to calamari rings, which it often pairs with.
THE FIRST GOLD-DRAWN GLUTEN-FREE PASTA
GlutiNiente stands out for its production process:
gold wire drawing which puts less stress on the dough and gives it ideal porosity and excellent permeability to the condiments;
slow drying at low temperatures, as in the best tradition, which preserves the nutritional properties while enhancing the flavor and aroma of the pasta.
Neapolitan Calamari
There's only one recipe that truly does this pasta justice: pasta calamarata. A typical Neapolitan dish, it's based on just a few ingredients: tomatoes and calamari rings. The combined use of gold dies and a slow, low-temperature drying process give the pasta just the right amount of porosity, perfect for absorbing any sauce. In fact, Neapolitan calamarata isn't the only recipe used to prepare this pasta. It pairs well with various types of fish, from seafood to swordfish. Some also use calamarata for meat dishes. Either way, it's definitely a pasta dish worth trying at least once!
